Quick Mango Pickle
SERVES: 4
PREP TIME: 10 minutes + 2 hours marinating
COOKING TIME: 5 minutes
Ingredients
- 1 teaspoon brown mustard seeds
- ½ teaspoon cumin seeds
- 100ml vegetable oil
- 1 x 400g can mango cheeks, diced into 2 cm cubes
- ½ teaspoon chilli powder
- ½ teaspoon ground turmeric
- 1 teaspoon salt
- 1 teaspoon white sugar
Method
- Place the mustard seeds, cumin seeds and oil in a frypan, heat over a medium heat until the seeds pop or until fragrant.
- Remove from the heat. Stir through the mango, chilli, turmeric, salt and sugar. Allow to cool. Refrigerate for two hours. Stir well and serve.
